PRODUCTION

Varieties:
Minimum 70% Manto Negro plus other added varieties

Hand-harvested in 14 kg crates and the indigenous variety Manto Negro – exclusively grown on our estate (very low yield) – adds a warm and fruity character.
The international varieties add body and freshness, enhancing the complexity, evolution and future of this typically Mediterranean wine.
Its malolactic fermentation and maceration partially takes place in open barrels, followed by 12 to 14 months in French oak barrels to complete the ageing, until the desired levels of complexity, elegance and smoothness have been achieved.
The wine is lightly filtered before bottling which adds brightness and clarity. No use of dairy or animal by-products (suitable for vegans).

 

TASTING

Cherry red with hints of purple, deep colour, clean and bright.
Aromatic prevalence of red berry preserve and a hint of toastiness from the wood that adds complexity and elegance.
In the mouth it is pleasant, broad and fresh, intensely fruity and appropriately tannic which will improve over the next 2 years. Lingering finish.

SERVING TEMPERATURE: Around 18ºC
FOOD PAIRING: Stewed meats, game and intensely flavoured beef.
BEST: From release and over the following 8/10 years.
